Healthy Meatless Recipes

Actually, I believe that it is redundant to say “A healthy meatless meal.” Unless of course, you are eating junk foods or sweets that are foods too and usually have no meats too. But we have this understanding at the start of this article that meatless recipes are meals without meat and are predominantly prepared with fruits and vegetables. Nevertheless, below are some recipes that will give you a good heart if you eat them often.

Apple Cranberry Sauce
(Makes 4 servings)
This tangy sauce is a great topping for toast, pancakes, waffles, low-fat granola, or whole-grain cereal. This is a very healthy breakfast meal.

Ingredients:
4 large Granny Smith apples, unpeeled, cut into large chunks
1-1/2 cups fresh or frozen cranberries
1/2 cup frozen apple juice concentrate
1 tablespoon sugar

Preparation:
Combine apples, cranberries, apple juice concentrate, and sugar in a medium saucepan. Bring to a boil on medium heat, then reduce to a gentle simmer and cook until the apples are softened, about 10 minutes. Pour the mixture into a blender or food processor and blend until almost smooth - but stop while there's still some chunkiness.

Herbed Goat Cheese Spread with Mint

Yield: Makes 16 servings
This easy appetizer is packed with flavor. And since this is a Latin-themed party, don’t forget to set out a bowl of chips with your favorite salsa.

Ingredients:
12 ounces soft fresh goat cheese, crumbled (about 21/2 cups), room temperature
2 tablespoons whole milk
2 teaspoons whole cumin seeds
1 teaspoon dried dill weed
1/2 teaspoon freshly ground black pepper
2 garlic cloves, pressed
1/4 cup extra-virgin olive oil
20 mint leaves, thinly sliced
32 (or more) seeded crackers

Preparation:
Mix first 6 ingredients in small bowl until almost smooth. Cover; chill. DO AHEAD: Can be made 1 day ahead. Keep chilled.
Transfer goat cheese spread to shallow bowl. Drizzle oil over. Sprinkle mint leaves over and serve with crackers.
