A heavy meal or a complete meal is not complete without an appetizer. I suggest you try this delectable appetizers, of course, still no meat.
Sweet Potato Soup
(Makes 10 servings)
Great holiday soup. Feel free to experiment with holiday spices.
Ingredients:
2 (1 pound) sweet potatoes, quartered
1 large tart apple, peeled and cored
2 tablespoons olive oil
2 stalks celery, chopped
1 onion, chopped
1 bay leaf
1 large carrot, chopped
5 cups low-sodium chicken or vegetable broth
1 cup low-fat milk
1 tablespoon lemon juice
salt and pepper to taste
Parsley (for garnish, if desired)
Finely chopped apple (for garnish, if desired)
Preparation:
Preheat oven to 400 degrees F.
On greased baking sheet, roast sweet potatoes and apple for about 40 minutes. Cool, and peel sweet potatoes.
Heat olive oil in a pot over medium heat. Add celery, onion, carrot and bay leaf. Saute until tender. Remove bay leaf, and discard. Add broth, sweet potato and apple. Puree in batches using a regular blender.
Return to soup pot and stir in milk and lemon juice. Season with salt and pepper as desired. Heat until warm, but do not boil. Serve in bowls, and garnish with parsley and finely chopped apples, if desired.
Egg Tacos

You can add any vegetables that you have on hand to the egg and cheese mixture for additional flavor and nutrition.

Ingredients:
4 eggs, beaten
1 cup shredded Colby cheese
1/2 cup cooked crumbled sausage
1/3 cup chunky garden salsa
4 taco shells
Preparation:
In small bowl, combine eggs with cheese, sausage and salsa. Pour mixture into a nonstick skillet over medium heat and scramble mixture until firm but moist. Spoon scrambled egg mixture into taco shells that had been heated in a 350 degree oven for 4-5 minutes. 4 servings.
